Does anyone have any research or links relating to the age at which players typically enter there prime in the MLB?

All these are on Tango's site. Quick links provided because I'm nice.

Aging Patterns

Aging Patterns, by components (This one is lots of numbers)

Aging Patterns and Selective Sampling

Do Speedsters Age Differently Than Leadfooters? I like this one a lot.

I didn't get Dagrims' joke until you posted this, so thanks for posting it. Good job to both of you.

I think you can make an argument from anywhere from 26.5 - 28 years of age as the peak, but from what I've seen, the former is a better argument.

For hitters, yes. Things I've read suggest that the prime for a pitcher might be a year or two later.

right now I'm reading "Baseball between the numbers" by the baseball prospectus crew and they suggest that a players peak is between the ages of 26 and 29.

Players usually stay close to the peak for a couple of years anyway.

28.5

26.5 is still a little young.

Decline begins around 34. A prospect quits being a spect around 25 or something like that.

This seems really late, unless you're talking about some kind of drastic decline. Really anything after the peak years is when a decline should begin (so around age 30ish, depending on the player of course).
