Organization Overview
Is the ability to customize the layout of the "organization" page been removed? Am I missing something or is it gone?

It's working for me, mine is set a 2x5. Any chance it's a screen size issue? Perhaps the option doesn't show up on smaller screens like laptops?

It’s possible..once I expanded the display settings on my MacBook, it re-appeared.
