No, you can only add commish access at the moment.

The stats displayed are not currently customizeable.
WAR is unfortunately not part of the SQL dump (neither is ZR or some of the other new metrics added in the last few versions).

Two possible answers:
Do you mean statistics splits like vs. LHP, vs. RHP, in day/night games? If so, then there is a player stats page you can access during the season which has some of this. However OOTP doesn't export splits beyond regular and postseason stats, so StatsLab can't display them.
If you mean, how do you split a SQL file and load it piecemeal, then the way to do that is on the SQL File Load page accessible from the admin menu. Just make sure you load splits in order.
