Yeah, you can just edit in a contract for them in commissioner mode if you want, just click on the edit tab in the player screen and then the contract tab. But you haven't actually lost the players, though - you'll retain the rights to most of them for at least a couple more years (longer if they're in/going to college) so you can always sign them next summer. Most probably won't be ready for the pros yet.
