I don't really think you can do this, unfortunately.

The MLB league has a fixed starting date, so no, there's no way to go back to the previous offseason for those types of leagues.

That said, when you create a new fictional league, it starts on Jan 1, so you get quite a bit more "offseason" in (3-4 months depending on when you want your season to start) before your first season begins.
