I believe this is what the "skip pick" button is for. You set up the sandwich round with the picks you need and then for the rest of the slots in that round you click "skip pick". This is done ahead of time, I believe.
For example below...if I wanted the 2nd round to be a sandwich round with the first 10 picks being compensation picks I'd click "skip pick" for each of the remaining picks in that round.
