1) Right-click player.
2) Select Set Game Strategy.

4) The player will now be on both the Lineups and Pitching screen. Set them up however you want.
The player will now have 2 fatigue ratings, one for batting and one for pitching. If you set a player as a starting batter in both lineups, he will only pitch when he's a SP (a RP will never actually pitch if they are also set as a full-time starting batter). They won't bat the pitching day and I believe the day after. The rest of the time they will bat. If you set them as a starter in 1 lineup or a backup, I believe you can set them as a RP and they will occasionally be used when they aren't batting. They'll never bat and pitch in the same game, as far as I know.
