I'm a relative newbie myself, so there may be a better way to do this, but the way I found to create new players is on the free agents screen.
On the far right of the free agents screen, there is an Actions menu. The Actions menu has three options: Create fictional player(s), Import historical player(s), and Delete all free agents.
The Create fiction player(s) option activates a pop-up that lets you select certain base elements for your player (role/position, age, etc.). Once the player is generated, you can edit the player to rename him and change any attributes you want.
