I would avoid minor leagues with random debut at this particular point. There just aren't enough players in the database to make it feasible at the moment. I would play with unlimited reserve rosters instead. In order to get players on teams other than what they are known for hold an inaugural draft and then do an annual amateur draft. I use five rounds for mine because with a reserve roster you don't want too many players or they'll pile up pretty quickly.
There's a setting to get the rest of the league to sim in the background while you play your game when you go into the game to do a final check over your lineups before playing your game. It says "simulate world in background". Click on "Yes (enables Baseball News Network)" for that and you'll get what I think you're looking for.
