I'll have to get back to you on the number that don't sign. As for how many automatically move onto college - it's basically zero players that matter. I believe the only way that it happens is if the player goes undrafted, then they will go to college sometimes. I have been manually moving some of the top players that don't sign out of high school just for my own sake.
The feeder leagues will start the season without enough players on the teams so I manually fill the teams the day before the season starts.
