This may be a little late, but you may want to check out
djpeg, which is what I used with my all-in-one installer. Most installer creators will allow you to specify a file to run after install...you can just point the installer at djpeg and tell it to go...
Packaging jpg files with my installer cut the file size down from 83mb to 24mb.
