This is especialy a good idea in "talent only" leagues where you don't really know where they stand against major league pitching.

Spring Training would also be useful in determining when to actually call up a prospect that you don't want to waste a year's contract on him. You could see how he's doing in spring training and decide to keep him in the minors for the year and not waste a year by calling him up during the season.
But if you're not carrying the results forward, how would you know to call up a kid or not? The beauty of OOTP is if you sim a season 100 different times with the same rosters, you'd get 100 different results. If the games don't really mean anything, running ST games with a separate league file seems like nice window dressing but not really worth anything.
