I would keep the folder somewhere convenient and copy and paste from it as needed.

Here's how I do it:

1. Go into the "all-star game" folder (I keep mine as a new folder in the "OOTP Baseball 27" folder) and then go into the folder for the host team that you want to use in the game. I'll use "PHI" for the Phillies as an example.
2. Ctrl+C all 6 folders in "PHI."
3. Go into "OOTP Baseball 27" folder (or whatever folder your game is pulling uniform assets from) and then Ctrl+V. Say yes to replacing the files with the same name. You should be all set then.
4. Repeat each season as the host team changes.
