Aahhh, I wasn't testing the "Generate" option because I assumed this would generate entirely new ones. Only tried both "Update" options.
But in the meantime I found a different solution yesterday, here's how:

before loading this quickstart game for the first time, delete the
faces.dat file right in the main directory of the
.lg save
- also delete the
faces.dat file from the
auto-save subfolder
- this will prevent the game from loading any pre-configured facegen/photo data
- meaning the game is going to create facegens/photos according to the user's settings, pretty much in same fashion as if it was a new created game
- it seems also safe to delete the thousands of
.png files under ...\your_game_name.lg\news\html\images\
person_pictures and ...\your_game_name.lg\news\html\images\
profile_pictures
- besides not having to use the generic facegens, additional benefit of this procedure is that it's also reducing the size of the initial save by about 50% to less than 900MB ^^
(this is without extensive testing, so no guarantee if there might be issues later on, but as of now I wouldn't know what that could be)
