I think the helmet color is controlled by either the primary color of either the Ballcap tab or the primary hex color in the Logos tab. Can't remember, too, if you need to have the primary color set for both the home and away ballcaps. Fiddling with one of these will get you to the right spot.

Sorry for the imprecise answer, but trying to give a quick answer while on a quick break.

As for the shoe color, I agree, I wish there was a global team set for that. Individual player shoe colors have only become a thing in recent years. I would love to set the 1970s Reds to all black without going into each player's profile to set it.
