I've been seeing the 1 catcher quite a bit lately in random debut leagues. It' is not a lack of players issue. I've seen teams with only 1 catcher on 25/26 man roster and 0 catchers on reserve roster. Seen this occur with anywhere from 10-15+ catchers available as free agents. I do play with high short term injuries and normal long term injuries, but I also more often than not delete teams upon creating my league, so the fewer teams allows for more rounds in the inaugural draft and better roster depth. For amateur drafts I use either 6 rounds with enough players imported for 8, or 7 rounds with enough players for 9 rounds.
Catcher, shortstop and CF are the 3 positions I think the AI has to try it's best to always have adequate coverage, because those positions are the ones the AI can't just stick another player in and have them learn the position. Had an outfielder forced to catch 3 games recently. Even though he caught a 1 hitter in one game, he had 7 passed balls over the span of 27 innings.
