You will need the skins to be available via Add On Central first. I have not checked if they are available yet.
Once you have downloaded and installed the skin you want to edit, you can replace any files that make up the skin. The ratings bars that you originally asked about are in the images folder...you'll see about 20 of them. Once you have the new images in place, delete the skin.bn file, start the game and the game will recreate/recompile the skin using the new images you want .
