This happens because there isn't a proper contract consideration mechanic unlike the old EHM series for both the AI staff and the player. That means when you receive offers from other teams, you either accept it and get instantly transferred, or you reject it and the offer is gone and the team signs someone else. There is no time for you to consider or negotiate the offer, no option to push the transfer back to next season, or to after play-offs/regular season in your current team.
You either take it, or you don't. Also, as far as I can tell, you lose score for what you achieved in your current team, only results from your new team work. If you want to switch teams, wait until the 30th June, get your score, resign, sim to 1st of July /so next season/, then pick your new team.
