As for the Pujols and Cabrera's contracts you need to stop looking at it from the end of the contract as overpaid but the start as being a bargain, so because of that you end up overpaying in the end.
The contact isn't about what the 40yr old player is going to be paid but what they get now. Most time it's likely a great deal, until it's not.
So while 41yr old Ohtani isn't close to being worth 50m+ a year, 31yr old him is though, or least was before the injury.

The important thing to remember is that even if you don't buy the Ohtani hype, if the MVP hits free agency and they are under 30, they aren't signing for under 300m. Trea Turner (!!!) signed for over 300m! Even if you aren't super keen on the 2-way thing, as a hitter he's at least worth 300m. Then he offers pitching.
