I’m wondering what if any, rules or game setup can be changed in OOTP?

To be more specific:

Can I change the number of innings per game?
Can I set a league to allow ties?
Can I force pitchers to only be allowed a set amount of innings per game?
Can I set the game to be first to 5 runs wins?
Can I make a Champions League type competition from multiple national leagues?
Can I create a team like the Portland Mavericks and have them play as an Independent team in the real Minor Leagues?

Anything odd and quirky to make things a little different I’m looking for
