Players who are released by one organization and signed by another are rule 5 eligible.
If you're not worried about them being picked in the draft, you can just eave then unprotected - remember anyone who drafts them will have to keep them on their roster for a full season, so if they're still very raw, odds are teams will pass over them.
When you are worried, you can add them to the 40-man roster.
