If it is too risky, how long does it take for these changes to reach the point of being a commercial release? If anyone could recommend whether I should download it or hold off I’d greatly appreciate it because I’ve never tried a beta before so I’m kind of clueless here

Well it depends on what people using the patch find and report. If all goes well then a release next week sometime would sound "normalish" to me. IF issues are found then another beta will be built and tested and the process starts again. Note Lukas' post about a bug with MLB player histories, so we know at least one more beta is coming. Now if users, such as yourself that are having an issue, don't d'load and try the patch that is one less user testing to confirm their issue is fixed.
If second C is your biggest or only issue then d'loading and testing it should be pretty straight forward. After installing the patch I'd run the "AI setup organization" (or whatever it's called) on all of it's teams to give it a chance to add an additional C. Or you could try it on just one team and see if it works that way too. Either it fixes it or it doesn't.
I would advise making a backup of your league (something I hope you are already doing anyway), then d'load and test the patch. Afterwards you could report back here that your catcher issue is fixed or it is not.
If you have any issues with the beta patch you can simply restore your backup copy and wait on the next patch.
As stated earlier, Lukas does mention.. "EDIT: Just a note, there is a known bug that most milb player histories did not load correctly for 2023 roster set players. We'll fix this in the next build."
This should only affect those starting a new game. Your game is already under way so you should be fine.
