Total chances is kind of a caveman stat compared to the more advanced stuff. It's just putouts + assists + errors, just like Matt said.

With a double play, the guy who is in the middle of the DP scoring would get 2 total chances. A 4-6-3 DP for example, the 2nd baseman is getting the assist with the out at 2nd base (1 total chance for him), the shortstop is getting the putout for the out at 2nd base and an assist for the out at 1st base (2 total chances for him), and then the 1st baseman is getting the putout at 1st base (1 total chance for him).

If you aren't physically assigned a putout, assist or an error than it doesn't count as a total chance - even if it's a play you absolutely should have made.... It's a relatively primitive fielding stat, comparatively speaking.
