Never mind, figured it out. For reference:
Go to /Users/<homefolder>/Library/Application Support/Steam/steamapps/common/Franchise Hockey Manager 9/Franchise Hockey Manager 9.app
control-click on the app there, a popup will ask to launch or move to trash, click launch, an error will pop up saying to use the Steam client to launch it. Go to the Steam client, launch the app, and it will launch from now on without issue - from both the Steam app or anywhere else, like the stub file in <homefolder\applications.
