There will be plenty of people around here that will be creating their own careers via spreadsheets and such. Once the game is released and everything is rolling there shouldn't be too much difficulty in finding the resources necessary to accomplish what you want in regards to extended manager careers.
Otherwise, there is always
World Championship Boxing Manager but currently there is no way to purchase the older version until they get their website back up and running.
