Are you saying they are changing when you're building the Custom game? Because you can move/edit them before.
If you're wanting to play a game in Challenge Mode (at the beginning) and need to change the League on July 1st, start your game, exit challenge mode, make your changes, retire your character. Then, you'll be prompted to create a new one which you can make in challenge mode again.
