Hello! One of your friendly neighborhood OOTP affiliate streamers here!
In terms of the timing of streams and such, it's partly in my control and partly out of my control. I have a day job during the weekdays that kind of precludes me from streaming during the day here in the US (nighttime in the UK), and I think that's the case for most of the streamers in the affiliate program (I think there may be a couple of them doing streams at more reasonable hours, like FKNCommish, but I'm not exactly 100 percent sure of their schedule).
However, I am looking at possibly doing something at a reasonable hour on a weekend day in the future - I have a fictional league I want to do on stream and broadcast/call games from, so that could be something to consider. I usually do a Saturday stream at 3 p.m. ET (8 p.m. BST, if my time zone knowledge is correct) doing random stuff, so I might do an OOTP stream then. We'll see.
As for your fears that the streams can be boring, I encourage you to watch some of my streams of the Perfect Team Weekly Showdown - I try to keep it entertaining, upbeat and informative (with a little bit of salt thrown in if I lose in a bad way, which usually happens). A link to the 8 videos of the series on my channel are here:

I hesitate to speak on behalf of my fellow affiliate streamers, but we all do our best to make things entertaining for our audience and keep them engaged. I hope you'll be able to make it to an affiliate's stream (or an official OOTP stream) someday!
