The actual sim was primitive compared to FHM, but that's irrelevant. The game can be as powerful as you want if hosted from one site. It seems OOTP is really missing an opportunity.
I agree with you on the missed opportunity - especially since pretty much the only other licensed NHL game is the EA SPORTS one, and they do not have an online league function. Having an online league structure could help boost some sales, but probably not enough to warrant the work to set it up.

That being said, we know nothing of the code and infrastructure of the game, and how difficult it would be to lay out for the team.
