Are you in the pre-season? You can't change the schedule after spring training starts.

Also, since the in-game scheduler can't handle interleague play or unbalanced schedules, the game probably assigns a schedule that matches your league settings from the files in the schedule folder. In other words, because you're playing with an MLB setup, the game might be using an MLB schedule. There's an entry on the Options page under League Settings that says "Schedule loaded from file." If there's a file name next to that, then you're using one of the game's existing schedules. If that's the case, you'd need to go into the schedule file itself and change the start date.
