To maintain realism you could have an option to hide or display these values when trading as desired.

I like the idea. Perhaps the number can be based on what you- and the other team's GM- need. If the team is rebuilding, they will not value veterans that highly but they'll like draft picks and young players. A contending team would want the opposite, because they're in "win-now" mode.
This way, when you're cycling through the teams you can more easily find a fit for your trades, since not every team will value your guys the same way.
Same thing could go for trade proposals- the numeric value would be based on your needs and the other team's valuation of your players. This would make evaluating those proposals easier.
