You can turn off injuries, trades, the rookie draft, finances, scouting, coaching, and many other options in OOTP. You can customize the game to be almost anything you want it to be, although I don't think you can turn off weather. Just keep in mind that there are consequences to doing these things.
For example, if you turn off injuries, then your overall statistical results may be skewed by the fact that players are never injured. If you turn off the first-year player draft, first-year players will go into the free agent pool, and it will be a free-for-all to sign them. In a historical game, the AI GMs do a terrible job with this, and the human GM can horde many of the top new rookies. But in a game where fictional new players are being created, with most needing years of development in the minors, I'm not sure what results you'll see.
