Windows only does big updates once a month, second Tuesday. You can set "Active Hours" where it won't try to apply updates, which default to 9:00am-5:00pm, so if you play in the evenings it might try then.
But the real answer is just apply the updates when they first show up and it won't try to do them on it's own later.
