I found it. The developers have done their best to hide it! It is:

Users >> [Tim] >> Library >> Containers >> com.ootpdevelopments21 >> Data >> Library >> Application Support >> Out of the Park Developments >> OOTP Baseball 21

Tim in brackets is the user name on my Mac. The bold represents the additional layer that has been added.

This certainly deserves a shortcut!!

P.S. I found it in game by selecting Settings >> Troubleshooting >> Open folder containing saved games.
