Yeah, it'd be a little bit of work, but you could start a custom game with the 2019 NHL structure and real players, have it start on July 1 and then in commissioner mode delete all of the teams except 2, move the players you want to them, set up a very short regular season and then a 2-team best-of-7 playoff.
