Others may have better suggestions than me, but I think I would start a 2020 MLB game; when you start the game click the setting that sends all players to an initial fantasy draft, delete down to the actual number of teams and edit names to those in your fantasy league, then export the league as .csv file so you can import to excel and easily assign the players to their teams.
If you plan on mirroring the transactions in the league as an ongoing basis, then you should set yourself as commish, and set all teams to your control and the AI settings to make no roster changes, so you don't have to worry about teams changing themselves or signing from the free agent pool as you sim the games, and leaving the remaining players in the free agent pool allows you to add them to rosters as your league's managers add to theirs.
Hmm, maybe you should also start with teams/rosters of AAA and AA MiLB affiliates as well, dumping them into the fantasy pool as well so they'll be there in case of a rookie flash sensation IRL. Or else, you will have to manually import them as they are added to MLB and your fantasy league's rosters during the year.
