You can edit or add any cameras by going to the park page and adjusting things there. Handy to find a camera you like in a park, save it, use the "copy to all parks" function, and then it should be available for all your games (although do note that you may need to quickly run through each park making sure the new angle doesn't accidentally end up behind a fence or blocked by a statue).
And to add, if you discover new angles that you like way more, please share and let us know, and we can certainly look to add them to the default models
