Or are you asking about the draft in your OOTP save/universe?
This can vary depending upon your league settings and occurs on one specific day and the calendar doesn't move to the next day until the draft has been completed.
You can locate this in your game settings under Rules. (Sorry, not in front of game to share screenshots.) This will give you the options of what day the draft is to be held, how many rounds the draft should be, and you can select how many rounds worth of players you can have the game generate for the draft. (In other words, maybe your draft is 25 rounds but you want the game to create 26 rounds worth of players to give a little cushion of un-drafted free agents.) You will find a few other options around the draft there as well.
