You should still get the "play" option on the day of the game, even if you're playing in GM-only. Have you unclicked "Show Games" under Team Control Settings on the Manager Options screen? That would cause the game viewing to be skipped.
About the callips, did you use AI Setup Organization at some point? That would make the IR/callup moves.
