If you want to go day-by-day instead of several days at a time while you're not managing a team, on the Game Settings screen (Game menu, Setup/Options), select "Always sim day-by-day."
It sounds like something may have been turned off in your news subscriptions. On the news screen (the envelope icon in the top-left bar), click on News Subscriptions. Under News Subscriptions Settings, the leagues you want to see should be listed - if they're not, add them via the Add League button. If they're already there, click the edit button and make sure some of the story types, like transactions, haven't been turned off.
The transaction log you're looking for is in the Free Agent Centre under the team menu - there are two tabs at the top of that screen, the second one (labeled "Transfer Summary") gives you the list you want.
