No, you're confusing AHL contracts with NHL contracts. An AHL contract is someone who is just contracted to that given team. The NHL team can't call the player up unless they've signed them to an NHL deal. Think Patrice Cormier or Brian Gionta this year.
I'm not 100% sure how it works in Fictional Game, but I would assume that the rights reset when the contract does as well, enabling them to be a Free Agent again. Regardless, their NHL rights are not owned by you, therefore anyone could draft them if they are of age. If not, then they would be free to sign them.
