There are reams and reams of screens to setup and configure. Start with Game > Game Settings > Global Settings and go from there. There are also tabs called "Players & FaceGen", "AI Settings", "Almanac" (not really necessary unless you want to set up the almanac feature), then you can skip to League Settings, which contains the tabs "Functions", "League & Teams", "Rules", "Financials", "Options", "Players", "Historical", and "Stats & AI". It is important to check out each of these tabs, and disable the things you want disabled, which sounds like a lot of things. Best for you to rummage around in there and figure out your perfect setup for your way to play. Don't worry about getting something "wrong". That's part of the process, which can be frustrating at first, but is well worth it once you get it.
