When bases loaded, go for force at home OR let runs score and get outs

Pick Off at any base
Pitchers Warm Up the same amount of innings as in real life before becoming available

These are some things I would hope a baseball sim would be able to do before I buy it.

Yes to all offense.
Defense i let the AI handle my shifts and such the only one i am unsure of is Force out at home vs throw to easiest base. i am leaning hard towards yes.
Warming up pitchers is affected based on weather and I know I can get a RP up with 2 outs in an inning and 75% of the time he will be ready by the time the bot of the inning comes around. If you leave him up to long he will get tired and sometimes affect his performance if you dry hump him too often.

You will not find a better game. Nothing the consoles have compares to this. Baseball Mogul is in many ways and my opinion 5 years behind OOTP.
The demo should be available if not for 18 then 17.I cant find the demo on Google.
