I could see Sorting by potential being an interesting thought. However the scouting list is much improved over previous versions. Trying to find players through individual scout lists was not ideal, so we tried something different this year. It wasn't rushed, it was more a reformatting of the previous version. The groups making it easier to compare players directly.
Part of the reason you may actually feel overwhelmed as well is the way you're choosing to Scout. When assigning Scouts, you can scout for Quality, or Scout for Quantity. If you're not worried about players who may not be great fits for you, I would suggest assigning your scouts to look for Quality, which will drop how many guys you're looking at as well.
