There is some basic information in the online manual about this.
Within the game there is a folder called "strategy_profiles" which I assume you have found. That can be accessed in the game with the drop-down on the strategy page so you could load your favourite manager.

One way to get to where you want to go:

Load a Manager (or a style of strategy) that is close to what you want, make some tweaks (overall, per score, per inning, as detailed as you want) and then export that strategy.
It will show up as a "team name" strategy in the "import_export" folder with the .str extension. You could then simply rename that to your favourite manager .str and then move it to the strategy_profiles folder.

And remember, as mentioned in the manual, the strategy only applies if you use auto-play to sim.
