1) You can change teams or control multiple teams by creating multiple GM profiles and switching between them.
2) There is a new real life minor leagues system that I have not played. That may be what you want. The other option is players enter the league when they played their first MLB season, not MiLB season.
3) There is an option for "Real Life Transactions", that may do what you want.
