1- You would need to do some scouting first so you can see the ratings for enough players. Then you can just go to the player search screen, change the view to defensive ratings, and sort by the Faceoff rating.

2- If you've already started the game, you need to copy the pictures into the same directory in your save folder. Having them in the quickstart will only affect new games.
