I think when it actually happens and a female player makes a team in organized pro ball THEN we'll see it in OOTP.
It's bound to sooner or later. Eri Yoshida played a couple seasons in Indy ball here in the US and a few more in Japan. Sooner or later one will show up in MiLB.
