One of the unfortunate things about the change in the coaching system a few versions ago is that we only see the reputation of a coach rather than ratings of what he's good at. This makes it harder to find good minor league coaches because those with good reputations will not be as eager to work in the minors. That said, you will find quite a few who are willing to. Look for ones with fewer years of experience and good reputation.

There's a little bit
in the manual that addresses personnel characteristics. The game styles are labels for a set of strategic preferences a manager has. You can see those preferences underneath the manager label. For example, a manager with a game style of small ball will likely show a preference for sac bunts. By and large, between the description of the manager and the strategic preference sliders on his profile, you should quickly get a feel for what the game styles are.
WRT to personality, you'll get some insight into the effects that the different personalities have. For example, for a controlling manager, you might read that his temperament is good for keeping youngsters in line, but that veterans might not appreciate it. Personally, I don't pay much attention to the personality type of my manager beyond trying to have my bench coach complement my manager by being personable when my manager is not, and vice versa.
