Every time I download the game file (patch or original) I save and then rename the file I just downloaded to reflect the version of the game. So I can then go back to whichever version I wish to. Takes but a minute.

edit: I also back up my .lg folders before I apply any patch and name that backup to reflect the version of OOTP it was saved under.
