Fielder essentially had a CEI, but will still be on the books for the length of his deal. So I'd suggest either giving him a CEI (at which point in-game he'll simply retire at the end of the season), or make him injured for like 5 years, so that he never plays again.
A-Rod is a tougher question. Probably makes sense to not retire him, but just make him suck. Then whoever plays would likely DFA/release him as they did in real life.
